I was 10 years old when I lived at my grandma’s house and not sure I remember all the details, but she asked me to make a BOX CAKE! Shock, I know. I remember reading the instructions and seeing how simple it was. I made them every week, trying new flavors and icings. You know the ones from the containers? Yeah… For the rest of the year I made boxed cakes, went to the library to look at cookbooks, and watched so many YouTube videos on decorating cakes.
After high school, I went straight to culinary school at Kendall College in Chicago, where I was trained. I was there for two years and I had an experience that really changed my perspective on what I wanted to do. I knew that cakes and decorating was something I knew I could do, but I learned that I could make so many more desserts, I learned what I was capable of. I was told by my chefs that my products were always amazing, but I knew in my heart what I really wanted to do. After two years, I knew that all I wanted to do was bake and decorate cakes.
